The cat woke us up at 5:30 (again!), scratching the sides of the bed! Not sure what he wants as Dr. D. hubby gave him food at 3am earlier! Anyway, he won and got me off the bed! I am craving for some muffins but It's too warm to bake! We can drive for donuts ($7.50/box but with 200++ calories?) ...hmmm..so beignet it is ...a family favorite after we visited New Orleans in 2007.
I have some pre-mix box in the pantry but I have outlined a recipe below if you want to make it from scratch (I've tried it and it tastes the same) .Still sleepy , so I will go for the box version today (I get this at World Market/ Kroger for $3.49)
As the girls will say it - -"Perfect match for Mom's coffee" (a.ka.everything is good with my coffee -- WHAT?)
BOX VERSION:
7 fl oz water
cooking oil
Makes 24 beignets
STEP 1: Combine flour and water. Roll
STEP 2: Cut into squares
STEP 3: Deep fry in hot oil
STEP 4: Top with sugar

Ingredients:
- 1 envelope active dry yeast
- 1 1/2 cups warm water (approx. 105°)
- 1/2 cup granulated sugar
- 1 teaspoon salt
- 2 eggs, beaten
- 1 cup evaporated milk
- 7 cups all-purpose flour
- 1/4 cup shortening, softened
- oil for deep frying
- powdered sugar
Preparation:
- In large bowl, sprinkle yeast over the warm water; stir to dissolve and let stand for 5 minutes.
- Add sugar, salt, beaten eggs, and evaporated milk.
- Whisk or use electric mixer to blend thoroughly.
- Add 4 cups of the flour; beat until smooth.
- Add shortening; gradually blend in remaining flour.
- Cover with plastic wrap and chill at least 4 hours or overnight.
- Roll out on floured board to 1/8-inch thickness.
- Cut into 2 1/2 to 3-inch squares.
- Deep fry at 360° for 2 to 3 minutes until lightly browned on both sides.
- Drain on paper towels and sprinkle generously with powdered sugar.
