I woke up with great energy! Three meetings in the morning and one hour brainstorming session in the afternoon...I have a full day! Too much activities going, but I feel rejuvenated because of the following:

D. It's Wednesday - -2 more days and it's the weekend again!
Anyway, I decided not to go with my usual bento box lunch today (See: BUDGET MEALS) and grabbed a banana, yogurt and cherries for lunch. Am I dieting? NO! Just lazy today...and bad move on my part! So clumsy - - spilling cherry juice on my beige slacks(thank goodness for Clorox wipes) and as expected during my 3:00 pm meeting , all I can hear is my rumbling tummy echoing in the conference room - - yikes! This means pasta dinner for us tonight - So hungry!
Interesting how garlic, olive oil and tomatoes can go a long way - - "arrabiata" sounds expensive , like a $16 per plate dish..but see how easy you can make it! Arrabiata sauce is meant to be spicy - -so feel free to be generous on the pepper, but this is the mild version.
INGREDIENTS:
olive oil
garlic
1 can diced tomato
basil
salt
pepper
olive (optional)
capers (optional)
mozzarella cheese (optional )
Estimate Cost: Less than $5
Assuming you have cooked the pasta already.
- Place olive oil, diced tomato and garlic and simmer for 3-5 minutes.
- Add basil, salt, pepper, olives, capers.
- Cook for another 2 minutes. Place on top of pasta. Add cheese
- Serve with french bread on the side. Enjoy!
