Today is wash the cat day! Yes, he takes a bath every 2 weeks and a shave off every 4 weeks. Expensive if we'll have Pets Mart team do the pampering every time so we just have our teens work him out (saves $40)
Of course, everything evolves around the cat, so all the activities are placed on hold till we finished his routine. Took the girls almost an hour for the cat and finally after another 30 minutes of making the kitchen back to squeaky clean condition- - the baking begins!
I have nothing to do with these muffins...but they are sooooo good - hats of to my youngest teen! Lovely! She made two batches - -one for us and one for a friend...
Seriously, this is better than the muffin I buy at Starbucks! Good job!
INGREDIENTS:
1/2 cup unsalted butter, melted and cooled
2 large eggs
1 cup buttermilk
2 teaspoons pure vanilla extract
1 3/4 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 1/2 cups light brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup semisweet chocolate chipsHERE'S HOW:
Preheat oven to 375 degrees
In bowl A: Beat together the eggs, buttermilk, and vanilla extract.Set aside
In bowl B: Whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Stir in the chocolate chips.
Fold the wet ingredients (bowl A) along with the melted butter, into the dry ingredients (Bowl B)
Place in the oven and bake until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes.
