One teen was telling me how she noticed the cat jumping on top of the stove lately -- and 2 seconds later, we saw him jumped exactly as she has described! Hmmmm....not a good idea...We need to address that!
Anyway, I totally spaced out and forgot that I have this whole chicken sitting in the fridge for 2 days now.
I was looking for a pomegranate as I have this recipe for my DINING WITH BATALI blog but the groceries around my area do not have this ingredient ! Waahhh..I can't wait for another day and I don't think it's a good idea to freeze this chicken at this point...so I'll just cook it tonight for tomorrow's dinner (maybe turn it into a chicken sandwich or whatever)
It's now 10 pm and the house smells like rosemary and chicken - - yum! As I scroll through my blackberry and prepare my checklist - - cooking ahead is a great idea as I have back to back meetings till 5:30 pm tomorrow!
1 whole chicken
salt and pepper
1 onion chopped
2 sprigs fresh rosemary
3 tbsp olive oil
So simple! Season chicken with salt and pepper. Place onion and rosemary inside the chicken. Place chicken in baking pan. Drizzle with olive oil, and bake at 375 degrees for 1 hour and 30 minutes
