Left over time!
I hate leftovers and yet I can't force myself to throw things away. I love cooking but I wouldn't call it a hobby as I am not as passionate as my other buddies. For me, spending quality time in the kitchen is an outlet for me(my stress reliever)and believe it or not, I am astonish myself that I can actually create these dishes as I barely have the time and energy to do so.
To save us money (and tempted)from unnecessary chinese buffet dinners during weekdays, I stock up on baked chicken. It's my emergency blanket on days that I have to work longer hours and won't be able to prepare a decent meal. There's a lot I can do about it - -chicken pita, chicken fajitas, topping to a soup ..when you think about it --it saves us lots of $$.Of course - I ended up with two ziplog bags of untouched chicken on the weekend as I still managed to create something in the kitchen even at the last minute.
Not a kitchen goddess...but I can definitely recycle my leftover chicken....
INGREDIENTS:
1 cup cooked chicken
1 can condensed chicken soup
1 cup mixed vegetables
salt and pepper
pastry dough
HERE'S HOW:
- Combine all ingredients and place in a pan
- Let it boil for 2 minutes
- Arrange pastry dough in a pie pan
- Place mixture in pastry dough and cover with second pastry dough
- Bake at 375 for 45 minutes
- Serve warm
