Why go for boxed cakes when you can make a french vanilla cake from scratch (and tastes better!). The teens are having a sleepover party tonight and I decided to be their sugar fairy by surprising them with a dessert that will surely keep them awake till the wee hours in the morning.
Except for my nightly dark chocolates and green tea routine while watching the O'Reilly rerun at 10CT , I am avoiding desserts nowadays. Hmmm..let's just say that I am too tired to go to the gym lately (and my small brain tells me to cut on sweets for now to offset my lack of willpower)....but my oh my -- I took one bite of this cake and I promise - -it tastes like a wedding cake that melts in your mouth..and the homemade whipped cream is amazingly heaven to my lips! By the way, I broke the mixer so I have to beat the whipped cream by hand (aawwww -- that's a good exercise)
I wanted to take another bite but .......NOT tonight....
INGREDIENTS:
2 cups sugar
4 eggs
2-1/2 cups all-purpose flour
1 cup milk
3/4 cup vegetable oil
2-1/4 teaspoons baking powder
1 teaspoon vanilla
HERE'S HOW:
- Preheat oven to 350 degrees F
- Using an electric mixer, beat sugar and eggs together until slightly thickened, about 1 minute. Add flour, milk, oil, baking powder, and vanilla and beat for another minute.
- Pour batter into two 9-inch round cake pans baking pan.
- Bake in preheated oven for 25 - 30 minutes
- Let cool completely before covering with frosting
FROSTING: Beat 1 cup whipping cream with 1 tbsp sugar and 1 tsp vanilla until foamy
