The day after Halloween is my favorite! This is my time that I go through the aisles of Walmart and Target believing that Willy Wonka land do exist as I go crazy picking out candies on sale. I checked Walmart first as all their merchandise are marked at 50% off the original price compared to Target (30% off) ....unfortunately, there are only a few kids who knocked on our door the other night so my pantry is still loaded with chocolates. I am skipping this candy sale, just browsing today but wait....
I didn't notice that candles are placed on sale too? Walmart has them at $4 but I found this $2 at Kroger (Originally $6)
I hope they smell good --as I'll come back for more ! Anyway, I am heading out to New Jersey today - -another business trip and I thought I'd leave some munchies for the family. This recipe has real apples and carrots on it (i scraped a finger as I was shredding the carrots - ouch). I used only 3/4 cup sugar but after tasting it I will increase it to one cup next time as the Granny Smith is so tart. I only ate one and I feel so full already - -Oh my!
My flight is in 3 hours..why am I baking ??? I need to pack ---
INGREDIENTS:
2 eggs
3/4 cup flour
1/4 cup oil
1/2 cup buttermilk or milk
2 cups chopped Granny Smith apples
1/2 cup shredded carrots
2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
HERE'S HOW:
- Preheat oven to 350 degrees. Spray muffin cups with nonstick cooking spray
- Combine eggs, sugar, oil and buttermilk in a large bowl. Stir in apples and carrots
- Mix dry ingredients together in a separate bowl. COmbine with egg mixture, stirring until moistened
- Fill muffin cups 2/3 full
- Bake for 20-25 minutes
- Makes 16 muffins
