I woke up extra early as I planned to have a warm and crumbly coffee cake that is toasty on the edges and moist inside with my morning coffee routine. So in between running around the kitchen , taking a shower, checking my emails and chasing the cat - - Amazing how I got things done in a jiffy!
I promise ...you won't spend $3/slice at Starbucks once you've tried this...
INGREDIENTS:
2 1/4 cups flour
1 cup sugar (This is the light version - -you may add 1/2 cup if you want a sweeter version)
1/2 cup butter or margarine
1 egg
1 cup buttermilk
1 1/2 tsp baking soda
1/2 cup chopped walnuts or pecans
1/2 cup raisins
HERE'S HOW:
- Preheat oven to 375 degree. Spray 9x13 inch baking dish with nonstick cooking spray
- In a large bowl, combine flour and sugar. Melt butter and pour over flour mixture, mixing until crumbly. Set aside 1/2 cup of mixture for topping.
- Add the rest of the ingredients to the flour mixture. Stir until just moistened
- Place in baking pan, Sprinkle reserved misture over top
- Bake for 25-30 minutes
