We were so tired from our long $11 shopping spree (HOW TO SAVE MONEY: TEACH KIDS THE VALUE OF HARD WORK ) and the family is still full from the big brunch yesterday (GAME HENS WITH POMEGRANATE: Beccazini alla Melagrana and MAC AND CHEESE) so we decided to take it light for dinner and just feast on focaccia bread dipped in olive oil/ balsamic vinegar and cheese on the side.
Hmmm...I love the smell of home made bread with rosemary in the kitchen.....
INGREDIENTS:
1 1/2 cup warm water
1 tbsp active dry yeast
1 tsp salt
1 tsp sugar
4 cups all purpose flour
1/4 cup extra virgin olive oil
1 cup grated parmigianno - regianno
1/4 cup mozzarella
1 1/2 tbsp dried rosemary
pinch of coarse sea saltHERE'S HOW:
Dissolve yeast in warm water until foamy. Add salt and sugar. Stir
Add flour and olive oil. Mix well with hands
Transfer ball to clean work surface (dust with flour) and knead until dough is smooth.
Place dough in lightly oiled bowl. Cover for 2 hours
Divide into two. Place in separate bowls. Cover and wait for another 30 minutes.
Preheat oven to 450 degrees. Oil two baking sheets. Place each piece of dough. Using rolling pin, flatten to fit in the sheet. Poke to make indention using your fingers. Sprinkle with cheese, drizzle olive oil, rosemary and salt.
Bake for 13- 15 minutes. Serve warm
