I'm craving for a danish pastry with apricot filling but I'm too lazy to make one. So I decided to tempt the girls out for breakfast at a nearby Waffle House but they are already out jogging. Hmmmm... hungry and lazy ? This basic loaf with only 4 basic ingredients will do the trick!
I tried this Irish Soda bread when I was in New York a couple of month ago and I like the simple taste with the crumbled texture. At that time, it was served as part of the antipasto but all the time I was thinking that it's perfect for dunking with my coffee (Well -- Irish tea for the real Irish --duh).
No one wants to go out? Fine, saved me $40 today....Oh....I added a cup of dried mixed fruit to give this traditional Irish bread a flair on my end. Tastes like somewhere in between a biscuit and a scone.....yum!
INGREDIENTS:
4 cups unbleached all purpose flour
1 tsp baking soda
1 1/2 tsp salt
2 cups buttermilk
HERE'S HOW:
- Place flour, baking soda and salt in medium bowl and stir to blend
- Add the buttermilk and stir until dough comes together
- Knead for a minute
- Place dough on a greased cookie sheet and slash an X across the top
- Bake for 50 minutes at 375 degrees
