I need to pack my bag for the Philadephia trip! Haaayyy--why do I have to schedule a trip on the first week of the year!
G1 is driving on her own now and we finally found a used Nissan Sentra for her. Getting a loan is easy but why pay the interest ? I want to pay for the car in cash and this means I need to sell some of my stocks this week. This car will be my first big purchase and this is exactly the reason why I have been saving money -- It's for the girls to use as I help them prepare for college. I'll call the broker tomorrow as this is my first time of pulling out money from my investment account (yikes, I need to pay for insurance too --oh well)!
Anyway, I took the girls for breakfast at Panera Bread yesterday -- I was tempted to purchase a loaf of bread ($7 each) but good thing I backed out as it's too pricey! Instead, I settled for a loaf of Asiago cheese bread (on sale at $1.80) at Walmart and since blueberries are also on sale ($1.50), I might as well make some blueberry crumb cake.
INGREDIENTS:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 8 tbsp butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 1/2 teaspoons vanilla extract
- 2 cups blueberries
- 1/2 cup light brown sugar, packed
- 3/4 cup flour
- 1/2 teaspoon ground cinnamon sugar
- 5 tablespoons melted butter
HERE'S HOW:
- In a mixing bowl with electric mixer, beat butter with sugar.
- Beat in the eggs
- Beat in sour cream and vanilla.
- Place in baking pan.
- Sprinkle blueberries evenly over the batter.
- In another bowl combine, together topping ingredients
- Add the 5 tablespoons of melted butter and blend well with the fork.
- Sprinkle the crumb mixture evenly over the blueberries.
